ULTRASONIC FOOD CUTTING
Before describing its operating principle, it has to be evidenced that ULTRASONIC CUTTING is an improper expression since cutting occurs solely by VIBRATION.
The use of the term “ultrasound” arises from the fact that vibration of the blade at 20,000 cycle/sec is within the ultrasound field.
The GENERATOR transforms the 50Hz electric signal into a 20KHz electric signal.
The TRANSDUCER turns the 20KHz electric signal into a vertical mechanical vibration. Such a vibration consists of an alternating series of compressions and elongations being repeated for 20,000 cycle/sec, developing a known amplitude.
The BOOSTER serves to convey mechanical vibrations and amplify the developed amplitude. The booster is also used as a fastening system onto the automation.
The BLADE receives the mechanical vibrations and conveys them to the edge. Such an alternating series of compressions and elongations, together with the set amplitude (cutting capacity), produces an air gap allowing VIBRATION cutting.
Ultrasound technology has been mainly employed in plastics welding.
The inherent mechanical properties of the vibrating component under stress have allowed for successful application of such technology in the food industry, and more particularly in food cutting.
These properties are such that, upon vibration, the specifically shaped vibrating element forms an air gap around the cutting blade and avoids direct contact with the food product, thus preventing greasy materials such as fat, sugar, honey and cream from sticking to or soiling the blade.
Such a mechanical behaviour affords precise and clean cuts, ensures rapidly repeated cutting and consistent product size/weight in the course of time, thus making the use of this technology almost mandatory.
